"Texa Potato Casserole"

All his family ever talked about was how awesome the peanutbutter pie was. That alone was driving me crazy so I finally asked him how to make the peanutbutter pie. Instead Mike handed me this recipe book called Callaway Cookin'
I figured it would be like the other dozen recipe books I bought or were handed down to me from my mother.
Wrong.
While it's not a big fat recipe book it does have some very good, quick recipes.
Of all the recipes in the book my ultimate favorite is the Texa Potato Casserole by Pat Strawbridge (AKA Mops), who is also Mike's mom.
It only requires 7 items and bakes 45 minutes to an hour.
My kids and I love it. In fact, it disappears within 1 day!
